This recipe takes some time, but IT IS WELL WORTH IT! The flavor is tremendous and the “Left-overs” aren’t left for long! I recommend doubling the recipe and freezing one for another day.!
You will need 1 pkg of Lasagna noodles and 1 pound shredded Mozzarella Cheese (I have used Cheddar when I don’t have mozzarella, and it’s also delicious), along with the ingredients below.
One pound browned sausage (I personally use Jimmy Dean as it has the best all-time flavor).
One teaspoon garlic salt
1 Tablespoon sweet basil
1 teaspoon salt
2 cans petite diced tomatoes (I like to use 1 can Great Value brand that has Green Peppers, Celery & Onions and 1 can plain diced)
2 6 oz cans of tomato paste (I like the Contadina brand with Pesto flavor the best)
Combine the above ingredients in a saucepan and simmer for 30 minutes, stirring occasionally.
While that simmers,boil lasagna noodles (don’t overcook) and combine:
2 cups cottage cheese (once I replaced the cottage cheese with one cup of cooked Quinoa and no one even noticed!)
1/2 cup Parmesan cheese
2 Tablespoons Parsley Flakes
2 beaten eggs
3/4 teaspoon salt
1/2 teaspoon pepper
Spray 9 X 13 pan with Pam and layer: Noodles, Meat Sauce, White Sauce, and Cheese. Make another layer of the same on top of that.
Bake in a preheated 350 degree oven. If you like the cheese soft, cover with tented foil for the first 20 min.
